Hong Kong Style Honey Marinade (text recipe)

/Ingredients/
- 500g chicken wings
- 2 tablespoon soy sauce
- 2 tablespoon honey
- 1 tablespoon oil
- 1 tablespoon Chinese wine / beer / white wine
- ½ tablespoon lemon juice
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
/Directions/
- Mix together all the ingredients.
- Transfer the meat to a freezer bag. Get rid of as much air as possible and tie a tight knot.
- Refrigerate for at least 8 hours, preferably 24 hours for a more intense flavor.

There is one thing that most of the Hong Kongers use during barbecue - honey. We just love adding honey before tasting our juicy meat friends. It not only gives a slightly sweet taste but also provides a beautiful glaze to the meat, making it even more mouthwatering. Surely, honey lovers like us also marinade meat with honey for barbecue! This is usually a marinade for chicken wings or other parts of chicken, but it works well with pork chops too.
You can substitute the Chinese wine with beer or white wine. The flavour won't be exactly the same, but this is how I do it when I run out of Chinese wine and I found these two kinds of alcohol fits to chicken pretty well.
I know not every one a fan of ginger, me neither! However, although we use quite a lot of ginger here, you can't actually taste it after grilling the chicken wings - so trust me! The main function of ginger here is to get rid of the smell after the chicken is refrigerated. It's normal for chicken to have such a smell even it's not expired, it's just not very decent if you're aiming for a high standard - which is always best! So using this small trick gives our chicken friend the best flavor while keeping him smelling fresh.
Simply mix all the ingredients together. Usually I do this step directly in the freezer bag - it's more quick and easy this way!
The most important step is to get rid of as much air in the bag as possible and tie a tight knot. This helps the the chicken wings to soak the marinade more easily, keeping our chicken friend deliciously juicy and fresh.
